The DSL and DSF formulations are specifically designed for dairy applications
like fermented milks (yoghurt and other fermented milk products),
non-fermented milks and cheese. These cultures are ready to be added straight
to the vat together with the main starter. The LAFTI® strains do not affect
the acidification profile of the main starter when used in fermented milk
applications.
The CG formulation is a free-flowing powder with a high concentration of the
LAFTI® cultures. They are formulated within a protective matrix of food grade
materials. The matrix gives additional protection to the cultures, improving
survivability against the acidic stomach environment. It also provides
additional stability.
Every single application requires its own specific formulation, depending on a
number of product attributes.
