End-products containing LAFTI®
As dairy products are traditionally perceived as very healthy, this product
category is and therefore excellently suited as as carrier for Functional Food
Ingredients. Among Dairy products, fermented milks especially yoghurt and
yoghurt based drinks, are the most popular delivery vehicles of probiotics.
All three LAFTI® probiotics have been shown to survive well through the
manufacturing process (high fermentation temperatures) and cold storage(low
PH) of yoghurt and related fermented milks & drinks, without compromising the
organoleptic properties of the products.
Furthermore, the LAFTI® probiotics have an excellent survival through the
GI-tract, which adds to their attractiveness for any functional diary food
manufacturer willing to ensure the delivery of efficient amount of probiotics
to the consumer.
The survival and stability of probiotics in the final product are ultimately
determined by the combination of ingredients (e.g. antioxidants, inhibitors),
the process parameters (e.g. temperatures, aeration), and the characteristics
