Delvoren®/Caglio Camoscio® is a range of animal rennet products. Two main
enzymes - chymosin and pepsin - determine the quality and performance of the
coagulants, and they are standardised for coagulating strength according to
market preferences and/or national regulatory requirements. Both Delvoren® and
Caglio Camoscio® are well suited for the production of traditional cheese, and
for cheese types that have to meet certain regional cheese regulations, such
as DOC.
