DSM Food Specialties has a long history in producing lactase. Maxilact® is a
purified lactase preparation, isolated from a special strain of the dairy
yeast Kluyveromyces lactis. This lactose-splitting enzyme efficiently
converts lactose into the nutritionally acceptable glucose and galactose. Our
Maxilact® product are highly purified and will prevent off flavour formation
in your premium milk products. The development of Maxilact® makes it possible
to produce digestible milk products for lactose sensitive consumers.
This DSM lactase is suitable for hydrolyzed and low-lactase milk products such
as yoghurt, dessert and dulce de leche. It can be used for vegetarian
applications and is declared Kosher and Halal.
