Premi®Coat
Premi®Coat has been specifically developed for usage as surface treatment of
dried fermented sausages. Premi®Coat is an aqueous polymer dispersion. A
treatment of dried fermented sausages with Premi®Coat helps the prevention of
mould and yeast growth on the outside of sausages during production and
distribution. Due to the careful selection of its constituents, Premi®Coat has
no influence on the maturation process of the sausage and allows for a natural
ripening. Furthermore, depending on the composition of the coating, the
moisture barrier can be varied and hence, Premi®Coat can provide various and
differing barriers against excessive moisture loss from the sausage during the
same period.
