The unique composition of PeptoPro® is shown clearly with High Performance
Liquid Chromatography (HPLC).
The casein protein, either in a solution or as a hydrolysate is pressed
through a resin. The time taken by the different components to do this is
measured (the peaks). The bigger the molecule, the longer it takes.
PeptoPro® (3) contains mostly small and non-bitter di- and tri-peptides. The
former used normal caseinhydrolysate (2) also contains longer and very bitter
oligopeptides which need more than 30 min to pass through the column. This
shows that in the second hydrylsation step the longer and bitter peptides of
(2) are destroyed and that PeptoPro® (3) is almost free of bitter
oligopeptides.
