Novo-Pro™ D

Description

Novo-Pro D is a protease from Bacillus clausii produced by submerged fermentation of a genetically modified (multicopy) Bacillus clausii microorganism. This product is produced from food-quality raw materials but an application for a food grade approval has not been filed.

Food-grade status

The product complies with the recommended purity specifications for food grade enzymes given by the Joint FAO/WHO Expert Committee on Food Additives (JECFA) and the Food Chemicals Codex (FCC).

Application

Novo-Pro D is developed for the production of digests from animal tissue. It can also be applied as a processing aid in technical applications. It is a liquid protease.

Standard dosage is 0.5 g/kg raw material (meat, skin, heart, liver, lungs). If viscera is used (including intestines) the dosage may be reduced to 0.25 g/kg.

Hydrolysis conditions

The conditions for using Novo-Pro D are 55°C (131°F) to 65°C (149°F). Hydrolysis time should be 1 hour for most digests, though pork/beef liver may require longer time or higher dosage. It is suggested not to adjust the pH which for the substrates mentioned will be around pH 6.5. After the hydrolysis, the enzyme should be inactivated to ensure that no active enzyme is present in the final product.

Safety

Enzymes are proteins and inhalation of dust or aerosols may induce sensitization and may cause allergic reactions in sensitized individuals. Some enzymes may irritate the skin, eyes and mucous membranes upon prolonged contact.

The product may create easily inhaled aerosols if splashed or vigorously stirred. Spilled product may dry out and create dust.

Spilled material should be flushed away with water (avoid splashing). Left-over material may dry out and create dust.

Storage

Enzymes gradually lose activity over time depending on storage temperature. Cool conditions are recommended. When stored in closed containers at 25°C (77°F), the product will maintain its declared activity for 3 months. When stored at 5°C (41°F), the product will maintain its declared activity for 12 months. Extended storage and/or adverse conditions, including higher temperature, may lead to a higher dosage requirement.
