- For optimal product performance, it is critical to fully dissolve the product in water at a temperature of minimum 25° C before it is used in the final application. The preparation of a stock solution is recommended.
- Direct addition of the product may prevent a complete dissolution of the beadlets, which may lead to the formation of rings in beverages or uneven coloration (dark spots) in other applications.
- When the product is used in a nutrient blend (premix), it is recommended to check the content uniformity of the blend. The particle size of the product is fairly large compared with other typical ingredients and this could result in segregation during shipping. Also, the dissolution of the product may be affected by the presence of other ingredients, and should be checked. When the product is used in a blend, it is not possible to prepare a stock solution as recommended above.
- Polyphenolic compounds may react with the proteins present in this application form and thus may affect colouring strength and colour stability.
- Ascorbic acid (vitamin C) is needed for optimal stability, especially in liquid applications. A typical use level of ascorbic acid as antioxidant in beverages is 200 mg/L.
