PreventASe™ Panna™, Bicra™ and Xtru™PreventASe™ Panna™, Bicra™ and Xtru™

DSM Food Specialties introduces a complete portfolio of application-specific and tailor-made PreventASe™ enzyme solutions for acrylamide mitigation. PreventASe™ is now available in three formulations: Panna™, Bicra™ and Xtru™. PreventASe™ Panna™ has been developed for wheat based products including bread, biscuits and crackers. PreventASe™ Bicra™ has been formulated for specific subcategories of biscuits. Finally, a tailor-made solution for extruded snacks has been developed as PreventASe™ Xtru™. Press release.

Rapidase® ExpressionRapidase® Expression

DSM Food Specialties has launched Rapidase® Expression, a white grape maceration enzyme, specifically developed to assist the production of popular premium white wines with an intense aromatic profile. Rapidase Expression optimises each pre-fermentation step in a single application. Its selected pectinase activities hydrolyse the pectin. This breaks the natural physical barriers, increasing the release of the aroma precursors and juice contained in the pulp and skin cells of grapes. Press release.
