Claristar™ - FAQ

On which type of wine does Claristar work?
Claristar™ can stabilise the vast majority of white and rosé whatever the sugar content. Efficiency of Claristar on red wine is under evaluation. Wines can be treated with Claristar as soon as 2 months after the alcoholic fermentation.

What is the mechanism of action of Claristar™?
Claristar inhibits nucleation of potassium tartrate crystals by preventing the formation of nuclei. In the case of residual presence of nuclei, Claristar delays the growth of the crystals. The addition of Claristar™ does not guarantee the prevention of the calcim tartrate crystals due the fact that this calcium crystallization is sorely foreseeable.

How could we store Claristar™?
Claristar™ should be stored in a cool dry place (<10ºC). Unopened containers have a shelf life of 12 months. Store opened containers in a refrigerator and use within one week.

What are the countries where mannoproteins are approved?
Mannoproteins are approved in all EU countries (including Austria, Bulgaria, France, Germany, Italy, Portugal, Spain, Greece, Netherlands and UK). It is also approved in the specific wine regulations of Argentina, Australia and New Zealand. Mannoproteins are also approved in the oenological codex (OIV).

Is wine treated with Claristar™ allowed to be exported?
Yes. Wines containing Claristar™ can be imported into the main markets, eg. USA, Russia and Canada.

Do other enological practices affect the efficiency of Claristar™?
All fining agents must be avoiding after treatment with Claristar: PVPP, Casein, Gelatin, bentonite, silica gel… The following additives could be added after Claristar: arabic gum, ascorbic acid, potassium sorbate. It is not recommended to use Claristar when the must/wine has been treated with calcium carbonate CaCO3. For the optimal efficiency of Claristar, 2 weeks should be respected before Claristar addition for the diacidification with KHCO3 and acidification.
