Claristar™ is a specific mannoprotein fraction extracted from yeast (
Saccharomyces cerevisiae).
Mannoproteins are actually a large family of molecules with different
activities and stabilities in wine.
Some mannoproteins have high
Tartrate Stability Index (TSI) and most mannoproteins have low TSI.
Claristar™ is made by a process which can select only the high TSI
mannoproteins, which is the main reason why it is so much more effective than
regular mannoprotein products.
The result is a 100% natural ingredient which works by preventing the
nucleation and limiting growth of potassium tartrate crystals.
