Every cell in every organism contains a substance called DNA that determines
the genetic properties of that organism. The genetic information is stored in
the strings of molecules that make up the DNA. A gene is a piece of DNA that
contains the code for the production of a particular protein in the cell. The
proteins that are produced determine the function and structure of the cells
and hence the properties of the organism.
Recombinant-DNA technology enables us to 'cut' pieces out of the DNA chain and
replace them with other genes. In this way the properties of the organism can
be changed, so that they can now do something that they cannot do naturally.
An organism altered in this way is called a genetically modified organism
(GMO).
