- Contains 80-85% protein
- Low in reactive free amino acids
- High in di- and tri-peptides
- Degree of hydrolysis 28-30%
- Shelf-life of 24 months
Solution properties
- Water soluble, even in cold water
- Completely clear solution
- Low in bitterness
- Stable over a wide pH range (2-8)
- No fallouts with minerals
- Low foaming properties
- Stable solution for 12 months (but note that combination with other ingredients or suboptimal storage conditions can result in drinks that have a shorter shelf life)
